Mama Mia! Pasta and Scrambled Eggs???


Some foods just go together. Peanut butter and jelly. Mac and cheese. Burger and fries. Pasta and scrambled eggs….??? Separately, each is great.  One is definitely lunch or dinner. The other is definitely breakfast. But together…it just doesn’t seem right. Until you try it, that is.
Believe me, I never would have come up with this food combination on my own. I just happened upon it when I was watching a Food Network show called “The Best Thing I Ever Ate.” It features Food Network chefs and TV personalities talking about – you got it – the best thing they ever ate. It was surprising to see that, for the most part, it wasn't all the fancy, upscale foods you'd naturally think these chefs would rave about. It was the simple things like pies, corned beef hash, french toast, just to name a few, that they described as the best thing they ever ate. One thing that particularly stuck out for me was a dish called "Pasta Mama"- a combination of spaghetti and scrambled eggs - that you could eat for either breakfast, lunch or dinner. 
"Pasta Mama" is a dish that comes from Hugo's Restaurant in West Hollywood (there's another location in Studio City, CA) and really, the recipe couldn't be simpler. You can use leftover pasta but warm it up in a pan with about 1 tablespoon of hot water before adding the eggs.

Ingredients 
 5 oz. of pasta (I used Buitoni fresh pasta that you can find at Albertsons)
 2 eggs, beaten 
 2 cloves minced garlic 
 2 tbs. chopped parsley 
 1 tbs. olive oil 
 1 tbs. water 
 1 tbs. of fresh grated Parmesan 
 1/4 tsp garlic powder 
 1/4 tsp oregano 
 1/4 tsp season salt 
 1/4 tsp onion powder 

Instructions: 
1. Prepare pasta – fresh takes 2-3 minutes; follow directions on 
packaging of dry pasta 
2. Heat saute pan on medium flame and pour in oil.
3. Add minced garlic and 1 tsp mixed seasoning; sauté together 1- 
2 min. 
4. Add parsley; add pasta and 1 tbs. pasta water  
5. Add beaten eggs.  Mix thoroughly.   
6. Add Parmesan, cook through and serve

I fixed this the other night and added a nice green salad and some crusty french bread (and of course a nice glass of white wine). It was delicious. And it was even better for breakfast the next morning. Give "Pasta Mama" a try. I think you'll enjoy it.

  1. OOHH I have had this before, my husbands mother used to make it back in Oklahoma and I absolutely loved it. The only difference was she added crumbled bacon to it...YUM

  3. Thank you for posting the receipe. I watched the show also and was so excited my 2 favorite foods combined.......

    So, I made the meal without a recipe. I could only remember Pasta, Eggs and oil (which i used butter) then topped with shredded cheese. Poor ladies version. YUMMY!
